ITC, the Academy of Infrared Training, The Infraspection Institute, and Snell are all good (I've been to ITC's level 1, The other 3 I've heard good things about).

Personally I would recommend an ITC course. I've been through Level I and Level II as well as the roof course. The material covered is on the money and the instructors are the best I've ever dealt with (and the food is good).
